OVERVIEW
Shiro Central is a stunning new outpost of the beloved Shiro brand, set within Tai Kwun’s historic Armoury building overlooking the Parade Ground. Helmed by executive chef Tatsuya Iwahashi and executive sushi chef Jeff Ko, the restaurant carries forward the brand’s signature crystal sushi — delicate layers of flavoured jelly over pristine fish and rice.
Standout combinations include fatty salmon with mint and sake jelly, botan ebi with ponzu jelly, and scallop with caviar and kimchi jelly. New to the menu are bluefin tuna plates, seared salmon with maitake, wagyu horaku-yaki, and vinegar-cured shime saba with yuzu.
REGULAR LUNCH OFFERING
Shiro’s regular lunch menu features a wide selection of snacks, cold dishes, creative sushi, classic sashimi, robata-grilled skewers, tempura, hot dishes, noodles, rice dishes, and desserts. Signature items include saikyo-style grilled black cod (tender texture elevated through a rich marinade of miso, mirin, and sake) and various crystal sushi options. The semi-private dining space accommodates up to eight guests, with sushi counter seats and indoor and outdoor tables available.
